Cranberry Sauce

(warning: hot sugar syrup leaves second degree burns, treat this boiling mixture with caution)

12 ounce plastic bag
1+1/2 cup Turbinado sugar
1/3 cup water
1 cinnamon stick
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon clove
1/4 teaspoon ground ginger
1 soft-skinned Orange, juiced and zested
( To "zest," you cut the white membranes away from the orange flesh and add the flesh to the cranberries.)

In a medium-sized pot, combine the cranberries, spices, sugar and water.
Add the orange juice and zest
Stir and blend.
Bring the mixture to a boil over medium heat.
Reduce to a simmer
Stir with a fork and simmer for an additional 5 to 7 minutes.
(CAUTION: Cooking too long turns the syrup into hard candy and nothing can reverse that.)

Some of the cranberries will burst and some will remain whole. Crush the cranberries against the side of the pot to the texture you like.
(Alternately, I take an emulsifier and roughly blend the hot mixture for 5 to 10 seconds at most. The idea is not to make it smooth but to simply crush the cranberries.)
Pour into a suitable container (or containers) and allow to cool before serving.
This sauce can be made ahead and kept in the refrigerator.
